Green Pea & Chorizo Risotto

Green Pea & Chorizo Risotto

Method

1 Heat 1 tablespoon oil in a pan over medium heat and fry chorizo sausage. Remove sausage from pan and set aside on paper towel.
2 Add remaining oil, reduce heat and pan fry onion, for 2 minutes.
3 Add rice and fry slowly, for 2 minutes, stirring frequently.
4 Add stock one cup at a time, stirring continuously after every addition until the water is completely absorbed before adding more. Continue adding stock and stirring until rice is tender (approximately 30 minutes).
5 Stir in chorizo and peas with the last cup of stock.
6 Finally, stir in butter and parmesan cheese before serving.
