Thai-style red curry salmon

Thai-style red curry salmon

Method

1 Cook rice following packet
instructions.
2 Meanwhile, heat 1 tbs oil
in a large deep frying pan over
medium-high heat. Add salmon
and cook for 2 minutes each side
or until browned. Transfer to
a plate. Add onion to pan and
cook, stirring, for 1-2 minutes or
until softened slightly. Add broccolini
and cook, turning, for 2 minutes or
until tender. Transfer to a plate and
keep warm.
3 Heat remaining oil in same pan.
Add curry paste and cook, stirring,
for 30 seconds or until fragrant.
Add coconut milk and bring to a
boil. Reduce heat and simmer for
2 minutes or until thickened slightly.
Add salmon and simmer for 3-4
minutes or until cooked to your liking.
4 Spoon rice onto plates. Top with
onion, broccolini and salmon.
Spoon over curry sauce. Top with
basil and chilli. Serve with lime.
